Orange & Avocado Salad
The sun may be shining today but it still feels so cold and wintery to me. As I anxiously wait for spring, it's salads like these that keep me from staying in bed all day.
How are you coping with the end-of-winter doldrums?
Adapted from Bon Appetit via Epicurious
2 tablespoons rice vinegar
1 tablespoon vegetable oil
1/4 teaspoon sesame oil*
2 teaspoons minced shallots
2 teaspoons minced ginger
a few handfuls of spinach or other greens of your choice
1 navel orange
1 avocado, halved, pitted, peeled and cut into bite size pieces
Mix the first 5 ingredients in a bowl. Add greens and toss to coat.
Cut off peel and pith from orange and cut into bite size pieces.
Add oranges and avocado to bowl and gently toss.
*I skipped this but added a splash more vegetable oil, and a 1/2 teaspoon of sesame seeds
