Cabbage and Beans

Sounds boring doesn't it?
But I promise you this modest combination of wilted cabbage, browned potatoes and beans is far superior than the sum of it's parts. As I dove in for my first bite I was surprised (maybe even shocked) by how tasty it was. I think this is easily going to become my new favourite healthy cold weather dish.

And if that's not enough to convince you to make this right away let me tell you about how I added the leftovers to some homemade turkey soup stock for the simplest and quickest, yet hearty and filling brothy soup.
I might even just have to make it again tomorrow morning for breakfast with a poached egg on top.

Cabbage, Apple and Pecan Salad

I'm grateful for this salad.
It's 12pm and I'm starving. I've been quite busy all morning with household chores, making breakfast and lunch for the working man, putting finishing touches on some chocolates, and truthfully I did not have a very healthy breakfast to start it all off.
So therefore I'm grateful for this salad that I made with dinner last night, and I'm really grateful that there was still some left in the fridge today, and I'm even more grateful that it tastes even better today than last night. Thank you winter salad.

Apple & Bacon Slaw

So last fall I had a real hankerin' for some slaw, and I completely blame it on all the lovely slaws posted by Smitten Kitchen. However none of them were really scratching the itch, ya know?

So I did a little experimenting and came up with a bowl of two types of cabbage, carrot, green onion, bacon, apple, and cilantro with a light, tangy, yet slightly sweet and creamy dressing.

It was a hit. So much so, that weeks later when our friend Sylvie suggested we make a cheddar and apple croissant at our cafe, my husband couldn't help but deduce that adding bacon and green onion would only make it that much better.

Beet & Apple Slaw

The day before my husbands birthday, I asked him what kind of side dish he wanted with his birthday meal of BBQ'd burgers.

"Slaw." he replied.

"What kind of slaw?" I asked in return.

"I dunno, just slaw. That awesome one you make."

"You mean the apple & bacon one? Or the ginger carrot one? Or the one with the green onion & cilantro dressing? Or the mango one? Or the.." I trailed off trying to remember what magical slaw he was referring to.
