Thai Cucumber Salad


As I made this salad, I thought of how I recently complained to you all about the woes of seasonal eating, and how I was craving light salads before winter had even really begun. Well clearly I gave in to temptation.



Inspired by/adapted from Chez Pim

2 cucumbers, thinly sliced
1/4 cup cilantro, chopped
2 green onions, chopped
1/4 cup coconut flakes, toasted
2 tablespoons sesame seeds

dressing:
1/4 cup fish sauce
3 tablespoons lime juice (about 2 limes)
2 tablespoons rice vinegar
1 tablespoon white sugar (start with 1/2, taste and add more slowly)
1/2 teaspoon red pepper flakes

My favourite time to serve this salad is with my husbands famous Green Onion Cakes.Pin It
