Spiced Rum Meltaways


Ok Ok. I know you are probably getting sick of cookies, I promise I'll share some "real food" with you soon. But these cookies are just too good to skip. You really must make them.



Adapted from Martha Stewart

1 3/4 cup plus 2 tablespoons flour
2 tablespoons cornstarch
2 teaspoons cinnamon
2 teaspoons nutmeg
3/4 teaspoon coarse salt
3/4 cup butter, softened
1 cup icing sugar
1/4 cup rum
1 teaspoon vanilla


Mix flour, cornstarch, spices and salt in a bowl. Cream softened butter with 1/3 cup of sugar until light and fluffy. Add rum and vanilla slowly and beat well. Gradually mix in flour mixture.
Divide dough in half, place on parchment paper and roll into a log shape, wrapping parchment around dough. Chill in freezer for 30 minutes. Preheat oven to 350 degrees.
Unwrap logs of dough and cut into 1/4" rounds. Place on parchment lined baking sheet and bake until just golden, about 15 minutes. Transfer to cooling rack, and when still slightly warm toss in remaining 2/3 cup of icing sugar.Pin It
