Oreos


I bet you never thought you could make your own Oreos, and I bet you never thought they could taste so much better than the ones Mr. Christie makes.
But I'm here to tell you, you can and you will.



Adapted from Smitten Kitchen

For the cookies:
1/2 cup plus 2 tablespoons butter, softened
1 cup sugar
1 egg
1 1/4 cup flour
1 teaspoon baking soda
1/4 teaspoon baking powder*
1/4 teaspoon salt
1/2 cup cocoa powder

For the filling:
1/4 cup butter, softened
1/4 cup shortening
2 cups icing sugar
2 teaspoons vanilla

Preheat oven to 375 degrees.
Begin by creaming butter and sugar together in a large bowl, then mix in egg. In a separate bowl mix flour, baking soda, baking powder, salt, and cocoa powder together. Add dry ingredients to butter mixture and mix well until dough forms.

Roll dough into small balls and place on parchment lined baking sheets about an 1" apart. With moist fingers gently flatten cookies.
Bake for 9 minutes. Let cool on baking sheet for a few minutes, then transfer to a cooling rack until completely cool.
To make filling, beat the butter and shortening together until well combined.

Slowly add vanilla and icing sugar little by little, mixing as you go to avoid lumps.
Using a knife spread some icing on the flatter side of a cookie and sandwich with another cookie.


*I forgot the baking powder this time around, and I didn't even notice.Pin It

  1. I used to make these when I started to learn how to bake but these were known to me as whoopie pies. :) And, yes, they are DELISH!
