Quinoa Muffins

Could I be any more obsessed with my current favourite cookbook "Super Natural Everyday"? I didn't think so, but I feel like my infatuation is reaching new heights. 
I had been searching for around for some quinoa muffins and these are just what I was looking for. Healthy, tasty, filling, with a great texture. Add they were quite quick to throw together. Bonus!



2 1/4 cups flour (I used mostly whole wheat with a little white)
1/3 cup raw quinoa
1 teaspoon baking powder
1 teaspoon baking soda (I forgot this and they turned out fine)
1/2 teaspoon sea salt
1 cup plain yogurt
2 large eggs
1/2 cup barely melted butter (barely melted?? mine was completely melted)
1/2 cup honey or maple syrup
grated zest of 1 lemon
2 tablespoons lemon juice

Preheat oven to 400 degrees. Butter muffin pan or line with paper liners.
Combine in a large bowl flour, quinoa, baking powder, baking soda, and salt. In another bowl whisk together the yogurt, eggs, butter, honey, lemon zest and juice. Add wet ingredients to dry and stir just until combined (try not to over stir). Fill muffin tin with batter so they are filled just below the rim. 
Bake for 15 minutes or until the tops are browned and just beginning to crack. Let cool in pan for another 5 minutes then transfer to a wire rack to cool.
