BLT Salad
Ok BLT sandwich, prepare to loose your title as my most favourite summer snack. There's a new BLT in town.
Adapted from Gourmet Magazine via Epicurious
serves 2
6 slices of bacon
1/4 loaf of bread*
head of lettuce
pint of cherry tomatoes
1 avocado
1/2 small red onion
black pepper
1/4 cup mayo
juice of one lemon
tablespoon of water
Cook bacon over medium heat until crispy. Drain bacon on paper towel but leave skillet with bacon fat over heat. Chop or tear bread into bite size pieces and fry in skillet with bacon fat until golden brown (5 minutes or so). Drain bread on paper towel and chop bacon into pieces.
Whisk (or shake in a mason jar) the mayo, lemon juice and water together.
Peel, pit and cube the avocado. Halve or quarter the tomatoes, and tear up the lettuce. Thinly slice red onion. Combine lettuce, tomato, bacon, croutons, onion and avocado in a large bowl and drizzle with dressing. Toss to coat and season with fresh cracked pepper.
*The first time I made this I skipped the croutons because I just didn't have any bread. It was so delicious and I couldn't care less that they weren't there. Today I made it with the croutons and while they were yummy and definitely make the salad feel more "BLT" inspired, I won't be running out to buy bread just to make this salad.
