Sometimes simple is best.
Like roasting pears in a vanilla laced sugar with butter.
I'm sure these would taste amazing over ice cream, but we just ate them as is.
This recipe comes from Smitten Kitchen:
1/4 cup of sugar
1 vanilla bean
6 slightly under ripe pears
2 tablespoons butter
2 tablespoons water
2 tablespoons lemon juice
Preheat oven to 375 degrees.
Slice vanilla bean open lengthwise and scrape out insides into bowl of sugar, mix well.
Peel pears, halve and remove cores. Arrange in baking dish, and nestle vanilla bean in between pears.
Drizzle pears with lemon juice, put a little butter in each half, and add the water to the pan.
Roast for 30 minutes, occasionally brushing/basting them with the pan juices. Continue roasting until pears are tender and caramelized.
Serve with pan juices drizzled over top.
