Peanut Butter Chocolate Chip Cookies
These are the best peanut butter chocolate chip cookies I've ever made/tasted.
They encompass everything I look for in a cookie: the perfect texture, the perfect balance of sweet and salty, and of course one of the most perfect flavour pairings ever; chocolate & peanut butter.
Do yourself a favour and make a double batch.
Adapted from Smitten Kitchen
1 1/4 cup flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter (I prefer salted), softened
1 cup natural peanut butter (I prefer chunky)
3/4 cup white sugar
1/2 cup brown sugar
1 egg, room temperature
1 tablespoon milk
1 teaspoon vanilla extract
1/2 cup chocolate chips
1/4 cup chopped peanuts
few tablespoons of white sugar for rolling
Preheat oven to 350 degrees.
In a medium sized bowl mix dry ingredients. In large bowl cream softened butter and peanut butter together. Add sugars and mix until smooth. Add egg and mix well. Add milk and vanilla extract.
Add dry mixture to wet mixture and mix thoroughly. Stir in chocolate chips and peanuts.
Place sugar on a plate and roll balls of dough in the sugar to coat. Flatten gently with the back of a fork, and place on an ungreased cookie sheet several inches apart. Bake for 10-12 minutes. Cookies may look underdone but they'll be perfect once they cool. Do not overbake.
