Cherry Tomato & Green Bean Salad


So simple yet so good. This is one of my favourite summer staple salads.

You really just can't go wrong with a recipe from Alice Waters.


From "Chez Panisse Vegetables" by Alice Waters

1 pound green beans
1 pound cherry tomatoes
1 large shallot
2 tablespoons red wine vinegar
salt and pepper
1/3 cup olive oil
basil or other herb*

Trim ends of beans, cut in half and parboil until just tender. Drain and spread out to cool or run under cold water. Mix vinegar, chopped shallot and salt and pepper in a large bowl. Whisk in the olive oil, taste and adjust seasoning. Halve tomatoes and add to bowl with dressing. Before ready to serve add green beans and finely chopped herbs and toss well. 

*I've only made this with basil and I think it really makes it pop. A few times I forgot the basil and it was just not the same.
